A Toast of Prosperity and Longevity at Hilton KL

Chef Lam and his brigade at Chynna, Hilton Kuala Lumpur has prepared a special Chinese New Year menu perfect to welcome a new year in celebration for the year of the ox!
Available from 5 January to 9 February 2009, mark off a prosperous new year with our very own Yee Sang to boost ‘good luck’. Our featured Yee Sang this year - Seared Wagyu with Pommery Mustard and Gold Flakes Lao Sang is a new creation by Chef Lam using Wagyu beef and Pommery mustard as the main ingredients to pair with condiments and home-made sauce. Gold flakes are sprinkled on top of the dish as final touches and symbols of prosperity and wealth.
The varieties of traditional raw fish Yee Sang are also available such as Norwegian Salmon with Extra Virgin Olive Oil Lao Sang and Treasure of Tuna Lao Sang. Others impressive Yee Sang such as Roasted Dried Chicken Meat & Pear Lao Sang, Charcoal Roasted Dried Octopus, Pepper & Jelly Fish Lao Sang and 10 Head Abalone Lao Sang are also Chef Lam’s recommended Yee Sang.
On the other hand, Chef Lam’s Chinese New Year set menus are ideal for family and friends or business. Of special highlights are Double-boiled Shark’s Fin Soup with Sun-dried Scallop, Chicken & Cabbage Heart, Braised Sliced Australian Abalone with Duck Confit, Sea Cucumber & Seasonal Vegetables, Deep-fried Live Soon Hock Fish Coated with Assorted Spice & Braised Eggplants with Basil Leaves and Seared Tiger Prawn with Pearl Rice in Supreme Stock. Prices start from RM1688++ to RM3888++ per table of 10 persons with recommended wine pairing at additional charges.
For further prosperity and to add a traditional festive mood, lion dance performance will appear at the hotel’s lobby on 3 February 2009 to deliver wealth, longevity and happiness for the year of the ox.

Chef Geoffrey Dingle has prepared two exquisite 6-course dinner menus for two separate occasions. Innovate and tantalizing western creations welcome the Christmas and New Year celebrations.
‘Tis Christmas eve (December 24, 2008), the wonderful meal begins with seared scallop with crispy cuttlefish followed by ocean trout, hamachi, ikura with fresh herbs and yuzu vinaigrette. Yabbies consommé will warm you up instantly. The next course, Chef Geoffrey presents special concoction of litchi sorbet. Then, for main course, choose either blanquette of cod fillet, ginger veloute with lobster ravioli or beef fillet medallion with miso glazed foie gras. Lip-smacking delightful dessert, filo pastry apple tartin with macadamia nut ice-cream ends the dinner on a high note. Set menu on Christmas Eve is priced at RM170.00++ per person (includes a glass of sparkling wine/sparkling juice/white or red wine).
Dinner for two or more? Enjoy intimate dining experience at Spices. Even on New Year’s Eve (December 31, 2008), there is a special menu planned. Dishes include lobster medallion/king prawn with tropical fruit salsa, sapodilla sherbet, beef fillet medallion with merlot jus and braised wagyu beef cheek or sample another choice of main – crisp skinned ocean trout with fondant potatoes.
